The Sidamo (or Sidama) is located in the Oromia coffee growing region of Southern Ethiopia. Due to the climate and acidic soil in this particular region of Southern Ethiopia, almost all of the coffees trees grown here produce coffee beans with remarkable fruity flavors and are also renown for being some of the most high-quality Ethiopian coffee beans.

"Your Ethiopian is good, but. . . I find it lacks some of the more fruity and floral notes that I have found in other brands. Your sidamo and yirgacheff seems like it should have more notes. It is pretty good asid, and the price is super competitive, so that's why I buy it because we drink a lot of coffee. Would love it more if it had more prominent notes"

"Hard to get this quality of coffee, from roasted to cup in such a short time frame, that isn't much more expensive. This particular bean is good, but I find it lacks a bit of the typical blueberry notes from an Ethiopian natural. Still, this is a solid roast (City), with moderate character and good drinkability. I'd buy it again at the price point."

"I've tried many of the light roasts offered by FRC and they are usually excellent, but this one is a bit lacking. It makes a decent cup of coffee (very smooth and easy to drink) but for the life of me I cannot get any of the fruity notes you would expect from a natural processed coffee or even much brightness, even when using a higher ratio of coffee to water. Remains a good choice if you just want a mild, easy-drinking cup, however."

Hello! Natural processing allows the sugars from the coffee cherry to impart flavor and fruity notes onto the beans. The extended fermentation time can produce wine like notes. Team FRC
Is it vacuum packed
We don't vacuum-pack our coffee. In fact, we CAN'T vacuum pack it! That's because we pack our coffee just after roasting - while it's still expelling air or "degassing" - so that even if we sucked out all the air, the bag would still puff up. That's the reason for the one-way valve on the bag - so that your coffee can continue to degas without blowing up the bag. We also nitrogen-flush each bag before sealing it. That pushes the oxygen out and oxygen is what makes coffee beans go stale. So while those coffee bricks you see in the grocery store might look cool and stack nicely, you can tell just by looking at them that they aren't Fresh Roasted.
