Ethiopian Yirgacheffe Kochere coffee is a prime example of how excellent washed African coffees can be. Washed or wet processing of coffee beans generally creates clean flavors and produces a consistent flavor profile. The acidity is diffused in these Yirgacheffe coffee beans more than most Ethiopian coffees, even while being grown in acidic, mineral-dense soils. Without overwhelming the palate with too much acidity, the final Ethiopian Yirgacheffe coffee creates a remarkably flavorful cup with just the right amount of citrus and fruit notes.
Kochere is a small area within the well-known Yirgacheffe coffee-growing region of Ethiopia. Located in the SNNPR (Southern Nations, Nationalities, and Peoples Region) of southern Ethiopia, Kochere is just south of the town of Yirgacheffe and is 250 miles southwest of Addis Ababa. The area contains washing stations where local farmers can bring their coffee for processing after it is harvested. The iron-rich acidic soil and high altitude of the region are ideal for growing specialty coffee and the Kochere district is known for producing some of the most lively Yirgacheffe coffees in the region.

"The Dark Ethiopian blend was very fine, one pot and it’s not gonna need much tweaking . The medium blend was not as rich but I have only made one pot and need to experiment. I have tried half and half blend of the beans but that too was not satisfactory just an okay pot of coffee. I think I will probably just stick to the dark roast."
