There are, in fact, some people who don’t like to drink coffee. If caffeinated beans aren’t your thing, enter Chicory Root (Cicorium intybus), a nutritious and flavorful plant that contains natural vegetable fiber in its deep roots. Chicory root has been cultivated since Egyptian times and is a cousin of the common dandelion. If you fast-forward to more modern times, chicory root was widely used during the Civil War to make coffee rations last longer. Throughout the southern United States, particularly Louisiana, Chicory Root is still commonly blended with coffee to deliver a savory punch and can be found in almost every cafe in the Big Easy.

Chicory Root is prized for its high natural fibers, known as Inulin. Inulin from Chicory Root is used in many foods to increase beneficial fiber without cutting back on fat and sugar. It adds creaminess and density to baked goods and can also be eaten boiled as a vegetable. Due to its natural prebiotic reputation, as well as being a fibrous root vegetable, Chicory is used commonly to aid digestion. You can brew our savory and toasty roasted Chicory Root as a coffee substitute or add it to your coffee for a flavor upgrade (with some bonus healthful benefits)!
