Colombian Coffee From Cauca: Manos Juntas Micromill Natural

Some coffees tell you exactly where they come from the moment you taste them. This Colombian coffee is one of those.


High in the mountains of Cauca, Colombia, cool air rolls down from the Western Cordillera and meets warm Pacific winds. That constant push and pull of temperature slows cherry development on the tree. Slower growth means more time for sugars and acids to develop inside the fruit. For coffee drinkers, that translates to the kind of vibrant, fruit driven cup that makes people stop mid sip and say, wait… what is that note?

Manos Juntas is a specialized micromill operated by Banexport that works with dozens of smallholder producers throughout the Cauca region. Many of these farmers cultivate coffee on small plots between one and two hectares.


While these farms are capable of producing outstanding Colombian coffee, building and maintaining the infrastructure required for processing can be prohibitively expensive.

Drying beds, fermentation tanks, depulpers, storage facilities, and quality control systems require both investment and time. For many farmers, managing all of that means less time spent doing what actually produces great coffee: caring for the trees and harvesting ripe fruit.

The Manos Juntas model solves that problem in a simple but powerful way. The name Manos Juntas literally translates to “hands together,” and that idea is the foundation of the entire project.

Instead of selling dried parchment coffee after weeks of processing, producers deliver fresh coffee cherries directly to the mill on the day they are harvested. Banexport then handles the meticulous work of sorting, fermenting, drying, and preparing the coffee for export.


The benefits are significant. Farmers are paid up front and at a premium price, often two to three months earlier than they would normally receive payment. Because the cherries are purchased by total weight, producers are encouraged to pick only the ripest fruit. Riper cherries are heavier, which directly rewards careful harvest practices that improve overall specialty coffee quality.

Meanwhile, the mill takes on the technical side of post harvest processing, ensuring consistency across every lot of Colombian coffee they produce.

Why Processing Matters in Specialty Coffee

In coffee, quality is often described as a balance between farming and processing. Banexport views it very simply. Roughly half of a coffee’s quality comes from how the crop is grown and harvested. The other half is determined after the cherries leave the tree through fermentation, drying, and storage.

At Manos Juntas, that second half receives incredible attention.


This particular Colombian natural coffee begins its journey the moment the cherries arrive at the mill. Each delivery is evaluated and measured for Brix and pH levels, which help determine sugar concentration and overall fermentation potential.

From there the cherries are placed into large hermetic fermentation tanks, where they begin the controlled transformation that gives this fermented coffee its distinctive character.

Anaerobic Fermented Coffee


For five days the coffee undergoes anaerobic fermentation, meaning the cherries ferment in an oxygen free environment. Each tank is carefully labeled with the name of the producer to maintain full traceability throughout the process. During fermentation, nitrogen gas is introduced into the sealed tanks. This stimulates the yeast activity responsible for transforming sugars inside the fruit.

Throughout fermentation the team constantly measures Brix and pH to monitor how the microbial activity is progressing. When the ideal point is reached, fermentation is halted by lowering the temperature of the coffee to about 20°C. This stops microbial activity and stabilizes the flavors developing within the fruit.

After fermentation, the cherries are allowed to rest and age in tanks for several more days before drying begins. They are then transferred to solar dryers where they slowly dry for 30 to 45 days.


This extended drying period is what gives natural coffee its fruit forward character. In this case, the careful fermentation and slow drying combine to produce a vibrant and expressive fermented coffee that showcases the possibilities of modern specialty coffee processing.
