Coffee Storage For Maximum Freshness

Ever notice cafés storing coffee beans in big glass jars or open bins? It looks great — but your beans would rather not live that way. While roasted coffee beans might be photogenic, they’re also fragile. If you want every cup to taste as good as the day it was roasted, how you store your coffee matters.

Why Coffee Storage Matters

Coffee bags aren't opaque because roasters are shy. They are opaque to protect the precious, delicate beans from their four sworn enemies: heat, moisture, air, and light.

Once roasted, coffee begins to break down, and exposure to those elements speeds up the process. Protecting your beans (or grounds) from them is the difference between “wow” and “why bother?” in your morning mug.

The Four Enemies of Fresh Coffee

1. Heat — Warm environments accelerate staling and oil breakdown. Store your coffee somewhere cool and stable — think pantry, not countertop, and nowhere near the oven.

2. Moisture — Coffee is hygroscopic. This means it absorbs water, odors, and even nearby flavors.  Keep it dry and far from humidity.

3. AirOxidation makes coffee stale fast. Every time your bag sits open, those delicious flavor and aroma compounds break down. An airtight container is your best defense.

4. Light — Sunlight and UV exposure turn roasted coffee beans oily, bitter, and dull. Always store them in opaque bags or containers, not clear jars

Whole Beans vs. Ground Coffee

Any coffee connoisseur will tell you that whole beans stays fresher longer than pre-ground coffee. This is because less surface area is exposed to air, so even with limited exposure (like opening the bag), the majority of the coffee is kept in an oxygen-free state.  


Once coffee is ground, every exposure results in more air contact and faster staling. If you purchase whole bean coffee, ensure to only grind what you need for each brew to maintain the freshness of your beans. 

If you go pre-ground, that's totally ok! Not everyone wants the hassle of grinding beans every morning, and some of those grinders are loud. Just make sure to store those grounds extremely well, and try to use them quickly so they don't have as much time to go stale.

Your Quick Guide to Coffee Storage

Do

  • Keep it sealed tight — Use a high-quality airtight container. When you buy from us, you’ll notice our bags include a one-way degassing valve. That valve lets the carbon dioxide your coffee releases escape safely while blocking oxygen from entering — protecting flavour right at the source.

  • Store in a cool, dark place — A pantry or cupboard away from appliances and windows works best.


  • Avoid the fridge and freezer unless absolutely necessary — Many coffee drinkers store or know someone who stores their coffee in the freezer. While this does seem to be a common practice, freezing can actually introduce condensation and moisture risks. Its far better for your beans to be stored at room temperature. 


  • Buy what you'll realistically drink — Coffee tastes best within a few weeks of roasting (which is why we roast your order fresh!) and once you open the bag, the clock ticks faster. 

Don't

  • Store beans in clear glass jars exposed to light + heat (pretty? yes. Helpful? not so much).


  • Leave beans in the grinder hopper or on the counter.


  • Refrigerate beans in the door where temps fluctuate and odors lurk.


  • Buy in bulk and trying to make it last months.

The Bottom Line

Ask not what your coffee can do for you — ask what you can do for your coffee. You already know what coffee does for you (a lot), so give it the respect it deserves. Keep it away from the four enemies: air, moisture, heat, and light. Buy what you’ll actually brew, store it smart, and when in doubt, trust an airtight canister to keep things fresh.
