    Nossa Senhora de Fatima is certified organic by BCS-OKO. The farm is owned by Ricardo de Aguiar Resende and his wife, Gisele, both of whom are 3rd generation coffee producers. They live on the farm and are very dedicated to their work. They have developed and implemented several social projects, including housing for workers, the building of a school, and an education program for the worker's children. The farm consists of 395 hectares, of which 235 are planted with coffee. Environmental protection and preservation are a priority for Ricardo and Gisele. They have invested in replanting native trees, taking care of the native flora and fauna, and the development of a reforestation process for shade trees. To improve the quality of the beans, the owners have created organic compost fertilizers and are using micro-organisms from the farm.

    Fine Ground: At a fine grind, coffee should be soft to the touch – slightly finer than granulated sugar.

    Espresso: Great espresso requires skill, patience and quality equipment. Without these things, and a proper grind, espresso can be thin and weak or over extracted and clog in the portafilter. The perfect grind is essential to reaching espresso nirvana; an intensely rich and creamy extraction with thick crema and well rounded flavor.

    Search for the great dark roast


    The search is nearly over...but it won't stop me. The Brazilian is a great, rich, robust bean. A bit less complex than the dark Mexican Chiapas, but very deep flavor. I've been away from the Dark Knight, looking for more darkness, I truly enjoy this bean, I need to taste all 3 side by side some day. Meanwhile I am enjoying this batch very much.

    Asked for this to be roasted so it wasn't greasy and could be used in our Jura automatic which can't do greasy beans - and I love dark roast :( -- It came roasted medium and tasted like a dark roast! To me cocoa-y, roasty-toasty, full flavored and just plain delicious coffee with a good amount of crema. This is definitely my favorite coffee so far and the icing on the cake is that that is Fair Trade & Organic!!!!! Delicious coffee responsibly grown and the people doing this are getting paid a fair wage! What more could I ask for?

    A good coffee, if not what I expected


    I've been drinking the "Dark Brazil Cerrado" from Fresh Roasted Coffee for about the last 6 months. The "cupping notes" on this coffee led to me to purchase a 5 pound bag. The coffee is good, but really doesn't match the cupping notes at all. I get not sense (or scent) of raisin or baked peaches. As with the Cerrado, it's a very smooth coffee. Subjectively, I like the Cerrado better. This also seems to have more caffeine that the Cerrado, although that's also subjective and based on the fact that I cannot drink my normal 3 cups per day without being wired the whole time..
