    Cooperativa de Servicios Multiples Sol y Caf̩é Ltda (Coop Sol y Caf̩e) was established in March of 2008 to unite over 1,000 farmers. This included rice and cacao producers. The co-op was originally formed to collectively make agronomic and economic decisions. One of their objectives was to protect the environment, and to help communities and their families to develop and progress. They continue to work towards the sustainability of their crops and development for the future by maintaining the Organic and Fair Trade certi cations.

    Location: In the mountainous region of Cajamarca, in the provinces of Jaen and San Igancaio

    Altitude: 2,952 - 6,561 Feet (900 - 2,000 Meters)

    Varietal: Typica, Caturra, Pache, Mondo Novo, Bourbon, Catuai, and Catimor

    Fine Ground: At a fine grind, coffee should be soft to the touch – slightly finer than granulated sugar.

    Espresso: Great espresso requires skill, patience and quality equipment. Without these things, and a proper grind, espresso can be thin and weak or over extracted and clog in the portafilter. The perfect grind is essential to reaching espresso nirvana; an intensely rich and creamy extraction with thick crema and well rounded flavor.

    This one is my favorite so far. As with the others I've tried from FRC, I cold brew for 24 hours. This process seems to bring out two of the cupping notes that are on the package. The caramel is front and center with a definite hint of orange. It's medium bodied. The aroma is wonderful and rich. This one is delicious.
