    Mexican Half Caf is a medium-bodied coffee with a crisp, slightly nutty finish.

    Coffees from Chiapas State are grown in the mountains of the southeastern-most corner of Mexico, near the border with Guatemala. The market name traditionally associated with these coffees is Tapachula, from the city of that name, but coffee sellers now usually label them Chiapas. Chiapas produces some of the very best and highest-grown Mexico coffees.

    The typical fine Mexico coffee is analogous to a good light white wine -- delicate in body, with a pleasantly dry, acidy snap. If you drink your coffee black and prefer a light, acidy cup, you will like these typical Mexico specialty coffees. However, some Mexico coffees, particularly those from high growing regions in Chiapas, rival the best Guatemala coffees in high-grown power and complexity.

    Fine Ground: At a fine grind, coffee should be soft to the touch – slightly finer than granulated sugar.

    Espresso: Great espresso requires skill, patience and quality equipment. Without these things, and a proper grind, espresso can be thin and weak or over extracted and clog in the portafilter. The perfect grind is essential to reaching espresso nirvana; an intensely rich and creamy extraction with thick crema and well rounded flavor.

    Fairly light body but full typical Mexican flavor & sweet & tiny bit spicy aroma, with just a little tart finish. Can feel a little thin if not brewed strong enough, but it's the same flavor you get tomando un cafe en un zocalo en Mexico.

    This is the best coffee that I have ever had. I love the half caf because I can enjoy a little more.. makes waking up in the morning something to look forward to. Great price for such high quality coffee.

    We first had Mexican Chiapas coffee while in Mexica & are glad to find this. We like it very much. We tried the Guatemalan coffee but came back to this choice.
