    Honduran Marcala Coffee - Fair Trade Organic

    In 2000, 62 Honduran coffee farmers united together to form COMSA (Cafe Organico Marcala, S.A) an organization with one common goal, to transform their farms from conventional to organic farming and production. In 2001, fostered by a foundation called Funder, COMSA earned their organic certification from Bio Latina enabling them to market their coffee to more international buyers and realize better selling prices for their coffee.

    In February 2006, COMSA was granted Fair Trade certification status. COMSA uses the Fair Trade price premium to fund many social projects including paying teachers' salaries and purchasing school supplies. The premium also finances the construction of kitchens in the schools in support of the Merienda Escolar program that provides meals for school children.

    Fine Ground: At a fine grind, coffee should be soft to the touch – slightly finer than granulated sugar.

    Espresso: Great espresso requires skill, patience and quality equipment. Without these things, and a proper grind, espresso can be thin and weak or over extracted and clog in the portafilter. The perfect grind is essential to reaching espresso nirvana; an intensely rich and creamy extraction with thick crema and well rounded flavor.

    Medium Ground: At a medium grind, coffee should be gritty like sand with no considerably large pieces.

    Coarse Ground: At a coarse grind, coffee is separated into large fragments similar to grained kosher salt.

    French Press: The French Press is a classic and easy way to prepare decadent and smooth coffee and can easily be converted to brew cold coffee. The coffee grounds and water are separated by a fine mesh plunger leaving only fresh brewed coffee after 5 short minutes.

    Toddy Cold Brew: The Toddy Cold Brew system is a simple and consistent way to extract a delicious and low-acid brew. Oils and fatty acids that would normally settle into hot coffee are eliminated leaving you with a perfectly balanced and smooth cup of iced coffee.

    Tasty, but not my favorite. But fair trade organic puts it way above the rest. Plus, it's roasted in my home state!

    Only picked up a sample packet of this one so far. Definitely creamy and I pick up the walnut and chocolate undertones very well. Adding this to the regular rotation on next order!

    • My God the lemon

    I've had Nicaraguans with a subtle lemon on the finish that topped off the body of the coffee nicely. This Honduran is extra extra lemon-y in a fairly thin bodied coffee. As in off putting. As in unpleasant memories throughout the day about the lemoniness of this coffee. I am mixing it half and half with Sumatra to get through the bag. Not a reorder for me.

    This is a very flavorful coffee, medium body, and not too strong for my wife. I like a little stronger coffee, but the flavor makes up for it. I won't drink anything else. Drink some and you're hooked.
