    Organic Colombian Sierra Nevada Coffee

    La Red de Productores Ecologicos de la Sierra Nevada de Santa Marta was established in 2001. The organization began a process of consolidation and organization of production, trade, and administration in order to move toward more sustainable production and marketing processes. This is a process which has required significant efforts by farmers and their families in changing from conventional to organic farming.

    Support of the organization has been fundamental in implementing conversion plans which include: construction of basic sanitation modules, processors for coffee pulping, building composters, trenches for garbage and recycling, defining production areas, and the conservation and the protection of flora and fauna. The project to date has 18 groups in which 600 families and 900 farms are involved.

    Fine Ground: At a fine grind, coffee should be soft to the touch – slightly finer than granulated sugar.

    Espresso: Great espresso requires skill, patience and quality equipment. Without these things, and a proper grind, espresso can be thin and weak or over extracted and clog in the portafilter. The perfect grind is essential to reaching espresso nirvana; an intensely rich and creamy extraction with thick crema and well rounded flavor.

    First bag out of five to be incorrectly roasted


    I guess the roasters have their off days sometimes. I was looking forward to some creamy, chocolatey goodness that I had each time with this coffee but this time I got a dark roast, oily, and bitter. Not sure what happened but 2 out of 4 bags of coffee were too darkly roasted on this order. The other bag of coffee to darkly roasted was the El Salvadorian Esperanza.

    Excellent Columbian coffee


    I like a good Columbian coffee and the FRC Sierra Nevada Columbian Organic is no kidding. This is a bold body, medium roast. Unlike other Columbian beans, this one has nice airiness that separates the upper and the lower tones in an enjoyable experience. You get the dark, chocolate of the traditional Columbian bean however, the almond and milk tones satisfy the upper part of the palate. This is one of my favorites due to it's nice milky coffee chocolate finish while having a sweet almond tone. I like it once about 3/4 cooled, the brighter tones start to kick in as the acidity level drops and the coffee takes on the caramel kick of the roast.
